Time: 20 min. prep + 20 min. bake = 40 min.

Ingredients:
- 1 1/4 cups flour
- 1 1/2 tsp baking powder
- 1 tsp salt
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1 1/2 cups chopped rhubarb (diced into tiny pieces)
- 1 egg
- 1/2 cup milk
- 1/4 cup oil
- 1 tsp almond flavouring
Directions:
- Combine ingredients and fold in rhubarb last.
- Put batter in muffin cups & bake for 20 min. at 350F.
